To Blend or Not to Blend: Cabernet Sauvignon and the Red Bordeaux Varieties

Our annual Wine Seminar, this year at Silver Oak Cellars, Oakville was moderated by Michael Silacci, winemaker for Opus One. 16 seminar wines, bottled and in barrel, chosen by their winemakers to illustrate variety, vineyard and vintage, were presented for discussion and tasting throughout the morning as we heard from the winemakers about the history and diversity of blending and their four blending philosophies.
After an introduction by Michael, the presentations of four wines and a tasting of each led by the winemakers were from:
- Chris Howell, winemaker and general manager, Cain Vineyard & Winery: the Cain Five and Cain Concept from 2012 and 2015
- Sally Johnson-Blum, winemaker, Pride Mountain Vineyards: 2015 Vintner Select Merlot, 2015 Reserve Cabernet Sauvignon, 2015 Reserve Claret still in barrel, and 2015 Vintner Select Cabernet Sauvignon
- Alan Viader, winemaker, Viader Vineyards & Winery: 2014 and 2015 DARE Cabernet Franc, the 2014 finished VIADER--a proprietary blend of Cabernet Sauvignon and Cabernet Franc, and still-to- be-bottled 2015 VIADER
- Nate Weis, winemaker, Silver Oak Cellars: 2015 barrel samples of Cabernet Sauvignon from vineyard blocks in Saint Helena, Soda Canyon and Atlas Peak, and a unique blend of the three
Following the seminar, an al fresco three-course lunch with carefully paired wines from Silver Oak and Twomey, all overseen by Silver Oak chef Dominic Orsini, was served on the patio--paired with its incomparable vineyard view. For further lunch details, please click Lunch menu.
