The EcoLab Theatre in the Culinary Institute of America-Greystone (formerly Christian Brothers Winery) was a venue new to the Wine Library. W. B. Bourn built Greystone as a vintners’ cooperative winery at the turn of the 19th century. Now dedicated to food and wine education, CIA-Greystone provided excellent support for the Varietal Seminar ably moderated by Bob Pecota.

Bob observed that over the last decades in Napa Valley varieties of white wines have changed. There is more interest, and there has been an increase in the number of great wines reasonably priced.
